Both the kebabs and the pilaf for this vibrant dish are made within the air fryer. For one of the best outcomes, marinate the hen items in a single day – they’ll take in all of the beautiful herbs and spices and will probably be super-tender.

Ingredients

  • 600g skinless, boneless hen thighs (trimmed of seen fats), lower into chunks
  • 6 tbsp fat-free Greek yoghurt
  • 1 tsp candy paprika
  • 1 tsp sumac
  • 1 tsp dried mint
  • ¾ tsp floor cumin
  • ¼ tsp floor cinnamon
  • 3 garlic cloves, crushed
  • 1 tbsp lemon juice
  • olive oil spray

For the garlic sauce

  • 2 tbsp mild mayonnaise
  • 3 tbsp fat-free Greek yoghurt
  • 1 garlic clove, crushed
  • lemon juice, to loosen the sauce
  • 1½ tsp finely chopped contemporary parsley

For the pilaf

  • 15g butter
  • 200g dried orzo
  • 1 small onion, diced
  • 360ml scorching hen inventory
  • 2 garlic cloves, crushed

To serve

  • lemon wedges
  • chopped tomatoes
  • chopped pink onion
  • chopped cucumber

Method

  1. Place the hen in a bowl with the yoghurt, spices, herbs, garlic and lemon juice, and season with salt and pepper. Toss till coated, then marinate for a minimum of a few hours or in a single day.
  2. To make the garlic sauce, combine all of the substances in a bowl till effectively mixed, then put aside.
  3. To make the pilaf, place a 20cm cake barrel within the air fryer basket and preheat to 200C for two minutes. Add the butter and warmth till melted.
  4. Add the orzo and onion and air fry for two minutes till the orzo is brown and toasted.
  5. Add the inventory, garlic and a pinch of salt and pepper, and air fry for 23-25 minutes, stirring midway by way of, till the inventory is totally absorbed and the orzo is cooked (don’t fear whether it is nonetheless a little bit al dente).
  6. Remove the cake barrel, cowl tightly with foil and put aside.
  7. Thread the marinated hen on to steel skewers. If you don’t have skewers, line the air fryer basket with non-stick baking paper or use the grill pan insert as an alternative.
  8. Spray the hen with olive oil and air fry for quarter-hour, till cooked. Turn the kebabs midway by way of cooking and spray once more with olive oil.
  9. Serve the hen with the orzo pilaf and garlic sauce, lemon wedges, tomatoes, pink onion and cucumber.
