“I am unable to afford meat or fish, it is out of attain for me. So I flip to what stays accessible, and which I actually admire: recent greens. It brightens up my meals a little bit, it’s a change from plain rice. For 4 years, I’ve been on incapacity and I profit from the costs of the Marché des sages, a social and solidarity grocery retailer of the Salvation Army Foundation, in Lyon. I can come there as soon as a day. Every time, I am going straight for the greens, I’m very eager on them. I like that they arrive from a brief circuit, from Meyzieu or Chaponnay [Rhône]. This is how they actually preserve their style.

Potatoes, peppers, zucchini… I like virtually all greens. But carrots, I do not know why, I’ve an actual weak spot for them. Here, there are purple ones, yellow ones, purple ones. As quickly as I see them, I already think about myself cooking them. With my canister for whipped cream, I can flip them into mousse, serve it in a small glass. I may make them julienned, pureed, tart or torte. And to reinforce the style, I add a little bit mustard, vinegar or cider.
