The Pouligny-Saint-Pierre is the emblematic goat’s cheese of the Brenne Regional Natural Park – situated within the heart of France close to Poitiers. Easily recognizable by its slender, pyramidal form with a sq. base, it’s a cheese constituted of uncooked, complete goat’s milk. It was the primary goat’s cheese to obtain the well-respected French Appellation d’Origine Contrôlée (AOC) label in 1972.

This cheese, matured for about three weeks, affords a creamy texture and a fragile, barely salty and typical goat’s milk style. It is distinguished by its skinny rind, typically coated with a slight mildew and undergoes two forms of ageing (refining): for one, the rind is white and presents extra caprine aromas whereas the opposite, with a bluer rind, leans in the direction of a mushroom style.
