Roast radishes with honey and mint | EUROtoday

I used to assume roasting radishes was only a fad, so as to add a little bit of color to a meal. But these are pretty, their warmth subdued, flavoured with vinegar, lemon and honey.

They’re scrumptious served with baked salmon – ideally one thing that’s not too assertive, so different fish dishes work properly (superb with bream or purple mullet) – or as a part of a variety of spring greens dishes (with asparagus, goat’s cheese and spinach tart, say).
